These peanut butter oatmeal balls have been so popular in my house that I just had to share the recipe with all of you. I make them ahead and keep them in the fridge for quick after school snacks. Kiddos love them for their sweet taste and chocolate chips, and I love them because I know they’re filled with good, clean ingredients. Win win. I found the original recipe here. Hope you enjoy!
PEANUT BUTTER OATMEAL BARS
- 1 1/2 cups rolled oats
- 1/2 cup milled flax seed
- 1/2 cup crispy rice cereal (I use Trader Joe’s)
- 1/4 teaspoon salt
- 1/2 cup peanut butter (I use Trader Joe’s)
- 1/3 cup honey
- 1 teaspoon vanilla extract
- 1/2 cup mini chocolate chips (or regular work too!!)
In a large bowl mix together oats, flax seed, cereal and salt. Microwave peanut butter 20 seconds and add to bowl. Stir in honey and vanilla and mix well to combine. Fold in the chocolate chips. Roll mixture to 1-inch balls (it’s actually more like smush them together into a ball…clean hands work better, so if you have a hard time getting them to stay together, wash your hands a few times throughout!)
These keep great for about a week – stored in the fridge in an airtight container.
