I think like a lot of people, a new year always motivates me to get back into the kitchen and cook more. Something a little healthier then Christmas cookies that is, ha! I always feel more inspired when I have some new recipes to try and I recently got two new cookbooks I’m loving and wanted to share with all of you!
First is The Laura Lea Balanced Cookbook – 120+ Recipes for the Healthy Home Cook. It’s all about finding balance in your eating and doesn’t fall into one food ‘category’. It does however offer healthy options with real ingredients that aren’t overly complicated. And she offers options if you want to do vegan, gluten-free, etc. So far my favorites include her Daily Green Smoothie, Energizing Oatmeal Cookies and last weekend I made her homemade meatballs for Sunday dinner and they were a huge hit!!
The second is Williams Sonoma’s Quick Slow Cooking. I use my slow cooker a ton during our busy weeks and it’s nice to have some new recipes to try out. My husband actually got me this one and right away I loved the ‘quick’ in the title, lol. There’s not a lot of prep work ahead of time in any of the recipes which is so nice! So far the Braised Chicken with White Wine and Herbs has become a staple in our house. And even though it’s called Summer Minestrone, we are loving that in our SoCal winter. I did try one that I was disappointed with…the Indian Cauliflower and Potato Curry. It sounded sooo good!! But unfortunately I thought it lacked flavoring. I think I might give it another shot though and do two things — cut up the potatoes smaller (the larger chunks got bland) and add more salt during the cooking process. We’ll see!
