If it’s in a muffin, my kiddos will eat it…most likely anyway. So therefore muffins are one of my favorite ways to sneak healthy foods into their diet! I love these muffins for breakfast and after school snacks. As with all muffins I usually make a double batch and freeze them. Then they are easy to pull out, pop in the micro for 20-30 seconds, and feed to my hungry kiddos (and me).
