Ahhh avocado toast….it seems to be everywhere, but I still can’t get enough. Especially with this new way I’ve been putting it together! You guys, it’s SO GOOD. And when I keep eating something day after day, I guess it’s time I share it with all of you!
I think the secret that makes this one so good is the addition of dijon mustard. I just love the little zip that it adds! I layer dijon, avocado, micro greens, feta and pomegranate seeds on a toasted yummy sourdough. If I’m feeling fancy I add a squeeze of lemon and fresh pepper.
I can barely call this a recipe…but here you go….
MY FAVORITE AVOCADO TOAST
Toast a slice of your sourdough and top with dijon mustard. Scoop out 1/2 an avocado and smash it on top with the back of a spoon. Top avocado with your micro greens, feta and pomegranate seeds. Eat up and enjoy! And don’t worry your other half of avocado won’t go to waste because you’ll probably make another one 10 minutes later.
